As well as spacious bars, lounges and decks, Seabourn ships feature the following dining venues:

  • The Restaurant offers a stunning setting for elegant dinners, featuring open seating at tables for two, or ten or anything in between.
  • Solis features light, healthy dishes that celebrate the culinary cultures of the Mediterranean, with signature dishes changing daily based on the ingredients found during the chef’s visit to local markets on days in port.
  • Earth & Ocean at the Patio offers a sophisticated menu celebrating eclectic flavours from around the world served in a relaxed setting under the stars, for a unique dining experience unlike any other.
  • The Colonnade is where guests enjoy lavish buffets or table service for breakfast and lunch, and regionally themed dinners nightly, in a casual indoor/outdoor venue.
  • Sushi is a venue where skilled chefs create exquisite sushi before your eyes for a delightful lunch or dinner experience. Seabourn Quest, Venture and Pursuit also offer Sushi in The Club, serving a variety of light sushi bites made to order each evening.

What’s new: six ways Seabourn is elevating dining at sea

1. Bringing local flavours onboard

With a deep commitment to sourcing the freshest local ingredients and elevating dining experiences to the highest levels, Seabourn is expanding its regional cuisine offerings to continue to celebrate the flavours of the world.

Menus now feature even more destination-specific dishes, such as locally and sustainably sourced Alaskan salmon. Guests might sip a boutique wine sourced that same day or enjoy a honey pairing curated from a local farm. Signature moments include, for example, a fresh seafood tasting following a wildlife tour in Wrangell, Alaska.

2. More fresh seafood, more often

Freshly caught seafood will feature prominently across all dining venues, with rotating ‘Chef’s Specials’ at The Restaurant and grill events at The Patio. Culinary shore excursions will also be offered, such as a live cooking demonstration and hands-on seafood preparation with a local chef. Think preparing fresh crab in Alaska, oyster shucking at a farm on Prince Edward Island, Canada, or fresh lobster tastings in Bar Harbor, Maine.

3. New dinner menus for The Restaurant

Seabourn is launching new dinner menus for The Restaurant, with 24 new appetisers and main courses inspired by local cuisines and featuring fresh seafood. Think marinated diver scallops and smoked trout carpaccio with Ossetra caviar to begin, followed by grilled sirloin beef & lobster spring roll with pomme purée, wilted spinach, sweet confit garlic and beef jus. Alternatively, continuing the seafood theme, seared seabass with wild forest mushrooms, tomato marmalade, lemon courgette and potato cream is also a standout.

Desserts are far from an afterthought, from chocolate peanut butter mousse and chocolate crème anglaise to salted caramel gelato.

4. Shore excursions with Seabourn chefs

Seabourn is also expanding its complimentary “Shopping with the Chef” programme where guests will join a small group tour led by the executive chef, and shop with them in bustling local markets, gathering spices, local wines and other small batch, local provisions.

One stop might reveal a case of cheeses in every shape and size; another, freshly caught seafood displayed on ice or a charcutier’s hanging pendulums of smoked or cured meats. Guests enjoy tastings, learning and good-humoured bantering between local vendors and the chef. Back onboard, they might recognise dishes on the menu featuring ingredients they first saw and learned about at the market.

Now Seabourn is rolling out even more opportunities for guests to join the ship’s executive chef on visits to local markets such as in Ho Chi Minh City in Vietnam, Penang in Malaysia, Nagasaki in Japan and Quebec City in Canada, plus late-night market tours in Bangkok, Thailand, Kanazawa, Japan and more fascinating destinations.

5. Dining ashore with locals

In select destinations, guests may now share a meal with a local family in their cosy home, gaining insights into their culture and traditions first-hand. This immersive dining experience offers a unique opportunity to connect deeply with the heart and soul of the region. Some examples include:

Etruscan History & Italian Farmhouse Delicacies (from Civitavecchia, Rome)

Guests may visit the medieval town of Tarquinia aboard a private trolley train and see the church of San Francesco, the 14th-century town hall, the cathedral and the 15th-century Palazzo dei Priori. They will then visit a local farmhouse for a light, delicious taste of Italian delicacies.

Flavours of the Peloponnese (from Gythion, Sparta)

Cross the plain of Laconia and pass through its olive groves shadowed by the mighty Taygetus Mountain, then visit the Museum of the Olive & Greek Olive Oil in Sparta and taste the wines produced on the family-led Theodorakakos Estate, which cultivates rare varietals in traditional fashion.

Sample the best food that Alaska has to offer as an experienced chef demonstrates how to make delicious regional dishes, as you gather around a large grill, absorbing secrets of the trade. Further culinary-inspired experiences include Seabourn’s exclusive ‘Caviar in the Surf’, which takes place on the shores of Carambola Beach, Isla Catalina or Ko Kood in Thailand.
